Sweet Potato with Pine Nuts
  • 2½ lbs. yellow sweet potato, peeled and cut into cubes
  • 3 tsp. butter
  • 1 cup heavy cream
  • ½ tsp. cinnamon powder
  • ½ tsp. salt
  • ½ tsp. ginger powder
  • ½ tsp. ground pepper
  • ½ cup pine nuts, toasted
  • ½ tsp. vanilla

In a Casserole with boiling water place the sweet potatoes and cook until tender. Drain and add remaining ingredients. Stir until pureed. Garnish with toasted pine nuts to taste.
