Mashed Potatoes with Pumpkins
  • 8 large potatoes, peeled and cut into cubes
  • 1 medium pumpkin, peeled and cut into cubes
  • 1 cup of Mexican cream
  • 1 cup cream cheese
  • ½ tsp. pepper, ground
  • Salt to taste
  • 1 clove garlic
  • ½ tsp. garlic powder
  • ½ cup butter
  • Butter cubes
  • Culinario Series® Healthy 9-Qt. Straining Dutch Oven w/Silicon Lid

Place the potatoes in a Casserole with enough water to cover. Add salt and a clove of garlic and cook over a medium heat. When potatoes are tender, drain, place in a bowl and mash. Cook pumpkin in the same water you cooked the potatoes to mix flavours. Drain and mash.

Mix mashed potatoes and pumpkins and add milk, cream cheese, pepper, salt, butter and garlic powder. Place the puree mixture in a skillet, top with butter cubes and bake in the oven for 10 minutes before serving.
