Mexican Red Rice
  • 1 Tbsp. Princess House® All-Natural Pure Grapeseed Oil
  • ½ cup chopped onion (about 1 medium onion)
  • 2 cloves garlic, minced
  • 1 tsp. ground ancho chile pepper
  • ¼ tsp. kosher salt
  • 1 cup long grain rice
  • 1 14-oz. can low-sodium chicken broth or vegetable broth
  • ¾ cup salsa
  • ¼ cup water
  • ½ cup finely snipped fresh cilantro
  • Princess Heritage® Tri-Ply Stainless Steel 6-Qt. Stir Pan w/Lid

In Stir Pan, heat oil over medium-high heat. Add onion, garlic, ancho chile pepper and salt. Cook for 2 minutes. Stir in uncooked rice; cook and stir for 1 minute. Add broth, salsa and water. Bring to a boil; reduce heat. Simmer covered, about 20 minutes or until rice is tender. Remove pan from heat. Let stand 5 minutes. Remove lid and add cilantro; fluff rice with a fork. Serves 6.
