Vegetable Chili

  • 2 Tbsp. Princess House® Pure Grapeseed Oil
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 3 14 ½-oz. cans diced tomatoes
  • 3 Tbsp. Princess House® Hot Chili Pepper Blend(or more to taste)
  • ¾ Tbsp. cumin
  • ¾ Tbsp. dried chives
  • 1 red pepper, cut into ½" pieces
  • 1 orange pepper, cut into ½" pieces
  • 1 15 ½-oz. can cannellini beans, drained and rinsed
  • 1 15 ½-oz. can red beans, drained and rinsed
  • 10 oz. frozen corn
  • Princess Heritage® Stainless Steel 6-Qt. Dutch Oven

Heat Pure Grapeseed Oil in 6-Qt. Dutch Oven. Add onion and garlic. Sauté 5 minutes. Add tomatoes with juices, Hot Chili Pepper Blend, cumin and chives. Cook 10 minutes. Add peppers, beans and corn. Reduce heat to medium low and simmer until thickened, about 30 minutes.
